Organic eggs are a healthy option and can be found in most supermarkets.

Atlantans consume a lot of eggs. Eggs are not just for breakfast anymore; they hide in or star in many lunch, dinner, and dessert items. You can “grow your own” organic eggs in your backyard or buy organic eggs at the supermarket. Incorporating them into healthy meals is a good way to add protein to your family’s diet.

Going vegetarian once or twice a week, using eggs as a meat substitute, is a good way to celebrate egg month. It is also recommended as a way to minimize consumption of meats that are higher in saturated fat than eggs. One large egg contains 70 calories, 6 grams of protein, 2 grams of monounsaturated fat (good fat), .07 gram polyunsaturated fat (good fat), 1.50 grams of saturated fat, and 185 mg of cholesterol. According to a Harvard University article, a common six-ounce broiled porterhouse steak contains 16 grams of saturated fat. Consuming red meat has been shown to contribute to colon cancer, may contribute to bowel cancer, puts women at a higher risk for breast cancer, endometriosis, and other ailments. Substituting eggs a couple of times per week can lower your risk and give you the opportunity to prepare exciting new dishes for your family.

The Georgia Egg Commission offers a free recipe club. Members receive new egg recipes via email every few months. Here is one recipe for a simple lunch to get you started:

Egg Salad Boats

12 hard-cooked eggs, chopped*
1 teaspoon dill weed
3/4 teaspoon celery salt
1/2 teaspoon pepper
5 tablespoons sweet pickle relish
2 tablespoons mayonnaise
3 tablespoons sour cream
2 tablespoons spicy mustard
1/4 teaspoon hot sauce
4 tablespoons olives, chopped
6 Kaiser rolls

Combine Eggs, dill weed, celery salt, pepper, sweet relish, mayonnaise, sour cream, spicy mustard, hot sauce, and olives; mix well.
Set aside.
Cut out a circle in the middle of the Kaiser roll. Keep the center of the roll to serve with the egg salad boat. Fill the roll with the egg salad mixture and place the center of the roll on the side.
